Make a Creamsicle Inspired Flash Brew at-home

Last summer I was sittin’ around, shootin’ the breeze with my coworkers talking about how the creamsicle popsicle was the essence of my 90s childhood. Needless to say as the typical millennials that many of us are, we all had a very similar nostalgic relationship with this creamy, vanilla orange flavor profile. And thus, this creamsicle inspired coffee experience was born out of an ode to our summer coffee blend: Daydream and a nod to the inner 90s kid in many of us. I do encourage you to drink this beverage sitting on the curb in your suburban cul-de-sac to achieve the full experience but I digress – I’ve set out to make our Dreamsicle beverage available to you no matter where you choose to sit this summer - so let’s dive in!!


Flash Brew (recipe for two!)

What you'll need: 

  • Ice 🧊
  • Scale
  • Kettle
  • Grinder
  • Pitcher or carafe
  • Pour over brewer
  • Filter paper
  • Freshly ground coffee 
  • Timer

Recipe: 

Instructions:

Start by grinding your coffee on a slightly finer grind than your everyday brew. We are aiming for a 3 minute brew here, but will be using less water since ice makes up a portion of our water component. To still achieve a 3 minute brew time,  grind finer and pour in increments of approximately 50 grams. If you find that your brew time is too quick, this is an indicator that you should try grinding a tad finer next time.  

  1. Put a paper filter in your pour over brewer and fully wet it in the sink
  2. Place 165 grams of ice in your carafe
  3. Pour coffee dose in the centre of the filter and give it a tap for an even grind bed
  4. Place carafe with ice and pre-wet brewer on a scale, tear the scale (make sure it is zeroed) and that your timer is also at zero
  5. Start your timer and pour your bloom. If you are new to pour over brewing–a bloom pour is a small pour to fully wet your grinds with about a 30 second wait until the next pour. This is intended to let gasses that are trapped in the beans during roasting dissipate so they don’t cause your coffee to under extract
  6. After 30 seconds, proceed to pour in 50 gram increments until you’ve reached 335 grams of water
  7. After your last pour, give your brewer a gentle swirl of the sludge to create a nice even coffee bed for your final pour to drip fully through. 

Planning on hosting a summer outdoor brunch with ice cold flash brew for your guests? This recipe is a 16.5:1 ratio–that means for each one gram of coffee there will be 16.5 grams of water/ice. For around 8 people it would be 120 grams coffee, 1340 grams water and 660 grams ice– just ensure that both your brewer and carafe are big enough! Grab a Daydream bulk bag to keep the party going!

Voila! Flash brew accomplished! Now moving right along...

First up, it's time to prepare the Dreamsicle Syrup 

Here's what you will need 🗒️

  • A pot
  • A heating element
  • Whisk or spoon
  • Sugar
  • Orange juice
  • Vanilla extract 

Recipe: 

  • 1 cup orange juice 
  • 1 cup sugar
  • 2 teaspoons vanilla extract

Instructions:

  • In a pot combine one cup of orange juice and one cup of sugar 
  • Bring to a boil on high and then turn to medium heat to let simmer for around 5 minutes
  • While simmering, add 2 teaspoons of vanilla extract 
  • Whisk to combine
  • Take off the heat and let cool
Now to make some Dreamsicle magic!
  1. In one cup, add 30 grams (approximately 2 tablespoons) of your new syrup 
  2. Next, add 50 grams orange juice
  3. Stir to combine
  4. Top up a full cup with ice (approximately 100 grams)
  5. Add 200 grams of Daydream flash brew
  6. Add around 80-100 grams of milk* and stir to combine (*you can adjust measurement based on how creamy you like it)
  7. Garnish with fresh orange slice, or heck, plunge a full creamsicle in your cup and snap a pic!!

    **This drink is intended to be consumed within the hour. The longer it sits, the more the acidity from the orange juice will begin to separate the milk.
