Coffee Story
This year, Holiday Espresso combines two regional lots called Honduras Cabana Los Planes, but each one is processed differently. One lot is a sweet, layered, washed coffee, and the other is a fruit-forward, naturally processed coffee. Both lots are grown close to the town of Cabanas Los Planes in La Paz of Santa Barbara by a group of farmers cultivating coffees and contributing them to the Rise series.
Honduras Cabanas Washed + Natural
Honduras Cabana Los Planes is a field blend of mostly Lempira, Catuai, and Pache. The naturally processed lot is submerged in a tank with water to remove floating cherries. The cherries are put directly on African beds or raised beds to be dried; the drying is stirred every half hour to ensure uniform drying, lasting 20 days. The washed lot is dried on raised African-style beds and circulated every 30 minutes for 15 days to ensure proper drying.
The Cabanas Rise Series is an effort to support and help smaller producing communities in their quest to improve coffee quality by purchasing larger volumes at premium prices. The series is a joint effort between our partner importer, Collaborative Coffee and the Paz family's Beneficio San Vicente in Honduras. The goal is to help these up-and-coming farmers in the Cabanas region by providing milling & logistic services and working with farmers on new strategies to improve farm-level practices and cup quality.
