Coffee Story
Grown on remote land above the village of El Triunfo in the San Jose de Alto district in Cajamarca by seven smallholder members of the Alarcon Family, this field blend of coffees is made up of Caturra, Catuai, Bourbon, Typica, Catimor. The 11 hectares of farms called La Palestina are split across seven small parcels where the Alarcon family collectively picks and processes coffee during the harvest to maximize efficiency. They specialize in the cultivation and processing chain and have worked on this land for over 40 years. Once handpicked, this specific lot is washed and tank-fermented for 24 to 36 hours before being transferred to patios and raised beds to be dried for ten days.
