Coffee Story
This year's Holiday blend combines Ethiopia Mayole Natural, a layered and sweet, fruit-forward, naturally processed coffee from the Uraga region in Guji, Ethiopia and a vibrant and creamy washed coffee from the Cabanas group in La Paz, Honduras.

Ethiopia Mayole Natural
Grown by smallholder farmers in the Dida Hora kebele, in the Uraga woreda of the Guji zone, this naturally processed coffee is comprised of heirloom varieties of Gibirinna 74110 & Serto 74112 that the smallholder farmers themselves have processed and then brought to the local Dida Hora drying station for final processing. The Dida Hore station is owned and operated by Sookoo Coffee and Mayole Coffee Owner Ture Waji. Ture grew up in the region and had strong connections to the land, its community and farmers. Between harvests, Ture and his team educate farmers on good agricultural practices to help improve the quality of their cherries. His company also provides pre-harvest loans to farmers who need them to cover expenses such as hiring labour for farm maintenance, including tasks like weeding and planting. He started Mayole Coffee to work alongside Sookoo and broaden the scope of coffee sourced through vertical integrations to include more coffee processed at farmers' homes, and expand its reach to source coffee from additional areas such as Haro Wolabo, Hambella, and Anna Sora.

Honduras Cabanas
Honduras Cabana Los Planes is a field blend of mostly Lempira, Catuai and Pache. The naturally processed lot is submerged in a tank with water to remove floating cherries. The cherries are placed directly on African beds or raised beds to dry. They are stirred every half hour to ensure uniform drying, and the process lasts 20 days. The washed lot is dried on raised African-style beds and circulated every 30 minutes for 15 days to ensure proper drying.

The Cabanas Rise Series is an initiative to support and assist smaller producing communities in their efforts to enhance coffee quality by purchasing larger volumes at premium prices. The series is a joint effort between our partner importer, Collaborative Coffee and the Paz family's Beneficio San Vicente in Honduras. The goal is to support these up-and-coming farmers in the Cabanas region by providing milling & logistic services, and actively working with them on new strategies to improve farm-level practices and cup quality.
