How do we feel about this coffee
It feels soft, elegant and comforting, like waking up to freshly buttered toast and milky black tea on a cold, frosty morning. It reminds us of the layers of sugary sweetness that coat and caramelize around a slowly roasted juicy peach and finishes with just the right touch of melting almond butter.
Coffee Story
Grown in the infamous specialty coffee region of Caranavi, near the town of Copacabana, this coffee is a beautiful blend of Caturra and Cataui from four producers - Martin Chirino, Julio Palli, Siverio Nina, and Julio Gonzales, where the peaberry beans from the lot are isolated. Peaberry occurs when the coffee fruit develops only a single, oval bean rather than the usual pair of flat-sided beans. These Producers have all been a part of Agricafe's Sol de la Mañana mentorship program, which helps regional producers increase coffee quality and productivity. Once de-pulped, this coffee is anaerobically fermented, washed, and mechanically dried for 105 hours.
