La Montanita is a beautiful lot that comes to us from the department of Chalatenango, a region in El Salvador dedicated to producing high-quality coffees. Their farm owner, Antonio René Aguilar, grows a combination of Pacamara, Pacas, Bourbon, and Geisha, and sees his dedication and drive to grow and sell more high-quality coffee as a way to provide opportunities and employment to his family and to the workers on his farm. This Pacas variety was picked and depulped, and fermented dry for 15–22 hours, and then washed and dried on patios for 8–14 days. In the cup, deep aromatics make way to a structured body with balanced notes of dried apple, milk chocolate and spice.
