Burundi Mutana Espresso

Coffee Story
The picturesque Mutana Hill is situated on the edges of the misty Kibira Forest in the famous Kayanza Province in Burundi. This bourbon lot is grown by 858 coffee farmers in silty and sandy soil, perfect for growing coffee and delivered to the Heza Washing Station. This washed coffee is floated and hand-sorted for ripeness upon arrival. Once handpicked at peak ripeness, the coffee cherry is delivered to the Long Miles-owned and operated Heza Washing Station to be processed. The cherries are pulped and undergo a double fermentation process. Parchment spends around twelve hours dry fermenting, then undergoes a twenty-four-hour wet fermentation. It is then rinsed in fresh water, graded by density and left to soak for another four to six hours in the final rinse tank. The parchment is carried to covered drying tables to be sorted again and then slowly dried on traditional African raised tables for 16 to 20 days.
